Healthy Recipe: Instant Pot Mashed Sweet Potatoes
These mashed sweet potatoes are the perfect side dish for your holiday table. Because they’re healthy, easy, and versatile, they’re just as perfect with any weeknight meal! One thing that’s great about this recipe is that you make it in the Instant Pot, which saves precious space in your oven or on your stovetop. Plus, it’s vegan, gluten-free, dairy-free, and Paleo friendly.
Ingredients
5-6 medium organic sweet potatoes
1 c. water
1/2 t. sea salt
1 t. dried thyme
1/2 t. ground cinnamon
1 T. maple syrup (optional)
2T. ghee, coconut butter, or vegan butter
Directions
Peel your sweet potatoes and cut them into 1-inch chunks.
Put the sweet potatoes into a 6- or 8-quart pressure cooker.
Add salt, thyme and cinnamon, and toss to combine.
Add water and lock the lid.
Cook on high pressure for 8 minutes.
Quick-release the pressure when the cooking time is up.
Remove the lid and stir in maple syrup (optional). For a smooth, creamy texture, add ghee, vegan butter, or coconut butter.
Use a potato masher or hand mixer to blend.
Serve hot.
